If two of my my units are going to assault a single enemy unit do both my units make their assault move and then the enemy unit reacts or do i make the assault move with one of my units then the enemy reacts then my other unit then makes it's assault move?

You charge both your units and then the enemy makes defenders react. See page 33 in BRB the assault phase summary. It's quite clear.

More specifically, Defenders React moves are made after all of your assaulting units have been moved. It's not done assault by assault... All of the assaulting players assaulters move, and then all of the defenders react.

That way they can't dodge you from being charged and or clear charge lanes.
