So Im fielding a 1250 point army and I have come to 15 assault troops with jump packs. Should I put them in 3 sets of 5 or 1 set of 10 and 1 set of 5?

Each has advantages and disadvantages
3 of 5: Increased flexibility, Ability to hold three objectives. Marines MAY run after losing two guys. 3 Sergeants
5/10: One strong unit with more power than a 5 man. Can only hold two objectives.

If you run 5 and 10, you can still combat squad the squad of 10. This gives you flexibility when you need it for objectives, or lets you keep a full 10 man squad, which is more resilient.
As already mentioned, you lose the 3rd sergeant with only two squads, and thus lose another pfist or pweapon, etc.

I personally have 3 Squads of 10-man squads. I used to run 5-man squads but that was not enough bodies to do much. Assault Marines are quite fragile unless they have a Sanguinary Priest attached and even then, they are not well protected without some cover. I would advise for the 10-man squad and 5-man squad. If you can spare some points and maybe some local currency, I would strongly recommend that you pick up 5 more Assault Marines to complete 2, 10-man Squads.

Yeah, I really think 15 Assault Marines is too few, unless you're taking them in Razorbacks, of course.
It isn't hard to fit 30 Assault Marines into a list at 1000 points and up.
