Umm it really depends on the list you face... but I'll see what I can do from a really general standpoint:
Blood Angels - Definitely Melee
Chaos Daemons - Melee
Chaos Space Marines - Leaning towards melee, but can be shooty
Dark Eldar - Leaning towards melee, with lots of shooting
Eldar - More shooty I'd say
Grey Knights - They can do melee well, but they're better at shooting
Imperial Guard - Shooty
Necrons - Leaning towards shooty
Orks - Melee
Sisters of Battle - Shooty
Space Marines - Fairly balanced
Space Wolves - Leaning towards melee, although you'll find really shooty lists too
Tau - Shooty
Tyranids - Melee

There are a few you forgot up there:

Grey Knights - Leaning towards melee with strong shooting.
Sisters of Battle - Shooty. Can be semi-melee.
Black Templars - Melee. Can be semi-shooty.
Dark Angels - Balanced

I agree with Andilus with the possible exception of his assessment of Necrons. I believe that Necrons are "leaning towards shooty" in the same way that the Pope is "leaning towards Catholocism." That is, of course, just my opinion.

I feel Blood Angels are leaning towards melee, but can be shooty
Imperial Guard Very Shooty, can be mixed (Blob Squads)
Grey Knights Balanced highly shooty, VG melee

I would say DE are balanced - if anything they would lean shooty in my opinion over melee - probably balanced is the smart answer.

@Jimsolo - probably the most competitive current Necron builds are melee oriented now to the best of my awareness. Certainly most Wraithwing and C'tan/Destroyer Lord exploits feature melee backed by Monoliths while the Warriors stand around picking their noses.

This one I don't agree with. Counter-attack a melee army does not make. I would say they are more shooty leaning towards melee.

BA: Balanced, Melee or Shooty depends on builds
GK: Balanced, lots of great range weapons, force weapons on everyone
IG: Shooty, with possible supporting melee elements.
Dark Eldar: Balanced, they are fragile, but can dish out lots of damage whether at range or melee depends on builds.
Eldar: Shooty, due to the fact most their melee units compare poorly against newer codex units.
Vanilla Marines: Balanced, the Jack of all trades.
Chaos Marines: Balanced, leaning more towards melee than Vanilla
Orks: Melee horde, with some good range support
SW: Balanced, they are great at shooty, but can build melee lists too.
Necrons: Shooty, mostly, possible melee though I've never seen in IRL.
Tau: Shooty, kind of their whole thing
Tyranids: Melee horde, with assault weapon range support.
BT: Melee, but can be surprisingly shooty due to their older edition point cost and structure.
SoB: Shooty, close range.

That's an awesome quote. I'm adding it to my sig.

On topic -- a lot of armies have the option of doing both.
- You can build a very respectable shooty BA list using razorback spam.
- IG blob squads can be scary to assault if they have 5 PWs and their stubborn. You need to bring a LOT to the field to take them down.
- An Eldar list with a squad of banshees assaulting a doomed unit is highly effective at killing MEQ.
- You can build a shooty ork list. A kan wall backed by 45 lootas brings a lot of shooty to the party.

Yeah, I agree for the most part, but Necrons have some really scary CC monsters (C'tan, Wraiths, Lords with Warscythes).
