So, I was doing a bit of fluff-surfing today, trying to find anything along the lines of a Grey Knight Successor Chapter, and I found these guys, the Exorcists.
http://warhammer40k.wikia.com/wiki/Exorcists
The reason why was because I'd rather have some color variation among my guys, especially if the Necron 'Dex rumors are true. So, long story short, do you think it would make sense to use the Grey Knights' 'Dex with the Exorcists, or would they be Vanilla Marines?

No, only Greyknights use the Greyknights book. Exorcists are just better at fighting deamons, they are not grey knights.

Nice idea, roll with it, it is highly speculated that they are a GK successor chapter...they are trained to fight off daemons/chaos...just get some GK termies and paint em' red

They are if you buy a box of grey knight termies and paint 'em red....they would also go faster, but that's for another discussion

You may of course use whatever codex you want for whatever chapter you want it to represent. Games Workshop endorses the use of your own imagination to create scenic battles you and your opponent enjoy 100%. There is no commandment from on high restricting you, though you will encounter incredibly narrow minded individuals that think there is one.

May I suggest you look at Chapterhouse Studios for some Power Armour and Tactical Dreadnought sized shoulder pads with a plausable Exorcist motif?

Nah, they only have daemonhunter sternguard that have special weapons, they are all not pyskers. They have a high concentration they are the greyknights if they had no pyschic powers and if they didn't give a gak about their secret.

Aren't they one of the cursed 23rd foundings? Or was it that they allow Daemons to possess their bodies and then excorsize them?

no. they aren't
They were made in 35th millenia, and they were under the thrall of the inqusition.
they did let daemons possess their bodies and then they were exorcized.

As long as it's obvious what models you're using, i doubt any opponant would complain about you using Grey Knights rules, especially if the colour scheme was up to the task.

Ummm...somewhere...

The exorcists don't use grey knight equipment, as they are not all psykers and would make the NFW practically useless. They are normal space marines who moderately follow the codex astartes (in terms of organisation). The only thing special about them is that they let themselves be possessed by daemons and are then exorcised, in hope that they will have a better chance of fighting daemons (see third war for Armageddon) in fact they even have a mention in the space marine codex. So no if they aren't all psykers then they aren't grey knights in anyway shape or form, use the nilla dex in saying that you can paint any army whatever colour you want, as games-workshop says, but it's probably better to stick to the fluff that there are no grey knight successors.

I'd run with it. Sounds very cool. You can fluff the abilities into non-psyker stuff if you want.

I lost one of my 'Ard Boyz semi matches to a guy who made some Chaos Marine Daemon Chapter using the Grey Knights' codex. He called his HQ's by slightly varied names and had "Cyber Daemons" as his Dreadknights. Black, silver, and purple, probably the best looking army at the store. Nothing at 'Ard Boyz says you can't alter original Citadel and GW models to fit whatever idea you have in mind for the army, and his conversions fit all the necessary parameters. This is done all the time for Chaos Marines and Orks, so I guess you can have any paint scheme with the Grey Knight codex. You really don't even have to explain it or have a back story. As for patrons of Friendly Neighborhood Game Store and other tournamnets, you'll have to find out on your own.

I don't write the rules. My ego just lives and dies by them one model at a time.
