40 models is a pretty small army at 2500. I would suggest you cut some of the wargear and Astorath to get more bodies on the field.
I'd suggest losing most of the Storm Shields from the VV squad that has them, all the wargear from the Priests besides their Jump Packs, and maybe keep the special weapons in the VV squads to about 4 each. You probably also don't need all those Meltabombs, maybe keep 2 per squad.
So, I think you can shave at least 470 points out from the above. I'd use them to take two standard Assault Squads, which are 10 men, 2 Meltaguns and a Power Fist. This will both get more bodies on the table and help you out against vehicles. Obviously, you plan to deal with vehicles in CC. This is a major problem in some matchups, as Fast vehicles can move 6-12" and still shoot something at you, while you hit them on a 6. The extra range for the Meltaguns would help with this, you have a 24" threat range.
Use the rest to make sure each SG squad has at least one Power Fist.

I haven't seen a good guard list. Your list has exactly same problems probably more so: you have a lack of bodies and a lack of killing options to name a few.
I am going to venture that some armies will not cope with this list so you should play your pretty gold troops and sometimes win and feel happy. You should try to feel happy more often than this but such is life.

At 2500pts I'd consider something like this:
Dante 225
3x Sanguinary Priest, 2 w/ Jumppack
(5) Sternguard, 2x Missile Launcher 135

(5) Sanguinary Guard, 2x Infernus 230

20pts left, combi meltas on the Priests or something.
Jumppack Priests go with the assault squads, Dante goes with the third one. Foot Priest goes with a Sternguard squad.
You've got 45 FnP marines flying up the field, 15 of them with a 2+ and PW's. The Sanguinary Guard act as beater units here, their job is to go and clean up units that fall out of transports you pop. If facing some sort of Deathstar, just mob it with all you Guard and Assault Marines at once.
6 doublemelta units flying up the field, supported by 16 missile launchers to suppress transports.
70 FnP marines, 15 of them with a 2+.

2500 pts is a lot.
I like the idea of the list. Just think the guard will be over priced, a squad of assault marines will fulfil the role better and then maybe you would add some venguards to make a mess. Also lascannons on the sternguard.
For me the sang. guard needs to force the enemy to waste their ap2 weapons. In both lists ap2 weapons would not be firing elsewhere in any case.

I have played list like this. there hard to kill, the main thing is i can swing frist and kill a few maybe before they can even attack. tho the hole army has eathe a 3+ 3+ or a 2+ 3+ its hard to handle even when i out number them 3 to 1.
