Just a quick question, if a Valk has a transport cap of 12 can it carry two squads of six or is it just one squad?

Just one squad. The only way to carry more than one squad is if it is an IC who has joined the squad. Or the vehicle has a special rule like the stormraven and dreadnoughts. The Valk/Vendetta doesn't.

Transports may only ever carry one unit (+attached ICs) unless otherwise specified.

You -can- unattach the IC by disembarking it alone, disembarking the unit alone, or disembarking both and placiing the IC out of the unit.
