I want a list that doesn't always get steam rolled by 2 MCs and a lot of gunfire.
Also wondering if this is fairly balanced and not wide open for a roundhouse kick to the face by some other army.
Plasma the crap out of this list.

Seems pretty standard, you're bringing the most reliable units in the codex for the most part. Some might say that captains suck, and that you should take a librarian with terminator armor and a storm shield, but I'm not one of those people. In fact, I'd spend your last 10 points on digital lasers for the captain
As for the rest of your list, personally, I'd experiment with something a little more original. Or at least add a little flavor, like maybe drop a speeder and take Sergeant Chronos for your LRC

Hooray for another digi weapons fan! I thought no one else would ever use them.
Chronos seems like a fun option yet would he be worth his points though?
How does he fare within your experience?
Good point on lacking flavour though, I would like to make the list a little more ULTRA like, but got no idea how.

Your a brave fella for taking just two troops at that points level though with that amount of armour, I'm sure something will be in the way of your rhino's at all times

you don't necessarily need more troops, I'd pretty much always combat squad the tactical marines with the missiles in cover and the rhinos going forward with the meltas with this list
you have a lot of anti-mech stuff here but not so much good stuff for after you get them out of transports. I'd drop a rifleman and stick in a TFC. That should get put in your 'long range firepower' section. I use two autolas predators, with their purpose of wrecking transports then hitting the passengers with 4xs6 blasts - one good way to make a squad of marines disappear. And with its range of "60 its always good.
The captain with relic blade is good, although for roughly the same points i'd stick in Cassius for 125. As I take it you'd send the captain in the LR with the termies, then Cassius will give them the re-roll fun. And yeah he's one wound less than your captian but at T6, feel no pain and a 3+/4+ he can be a pain to get rid of
Drop a speeder, and with the points saved plus your 10 pts left over (+5 if you swap cassius for the captain!) then put in a unit of scouts with sniper rifles and a hellfire heavy bolter, thats a cheap, reasonably hitting power unit of troops, if you want more that is!

Yay! a totally useless post! We all know how Tau totally owns in this mech heavy meta
Anyway, onto the list.
not much to say, the Captain is not a good choice. A Libby with Null Zone and avenger would do you much more good.
I would get some combi-weapons on the tactical squads and upgrade one MM/ HF speeder to a Typhoon

I would second the idea of taking a librarian over a captain. Their anti-psyker abilities is all the more valuable now with the plethora of GK. Null zone on units the termies are going to charge is loads of fun!
3 suicide speeders does seem a lot. Why not go for a LS storm and get that extra troop choice, or even go for the typhoon (even though I think it's too expensive).

I like this talk of Cassius (aka the Terminator), since I always wanted to take him but thought him not as effective in a > 1500 list. Reroll Hammernators would be far more effective than exta 3 strength 6 attack. I never knew Cassius also had feel no pain though, but now that I do, holy crap he will be so hard kill.
I also like the idea of employing some scouts into the fray and will happily remove a speeder/rifleman for them.
As for the thundercannon, i love the firepower but I always cringe at how easy the enemy can take out the tech marine and am not sure if it will be worth 100pts.

The reason I have not employed a librarians is that I often play against an eldar player that always gets runes of warding to mess up my psychic tests, so i am searching for an alternative. Yet against other armies my clear choice shall be a Librarian.
Would combi melta be a more viable choice to kill more mech, or a combi flamer to make the tac squads more versatile?
I like the idea of typhoons, two missles on the move would be very useful.

eh, even against Eldar you want to be running a Librarian.
He gives you a pretty cheap HQ, and the psychic hood helps a lot lower the overall effectiveness of Farseers. You don't even need to cast to have your Librarian be useful, just try to keep him within 24 inches of the Farseer and block a few of those Eldar powers.
If hes running a Jetseer Seer Council, you can potentially cripple the squad by successfully casting null zone, and/or blocking fortune.
50% chance of a crippled over 600 point death star
40% chance of a wound on your Librarian... I'd take those odds.
I mean you don't have to be overzealous with your casting, but psychic defense helps a lot against armies like Eldar that rely so much on psychic powers.

If you replace the captain with cassius, just get ea for the LRC.
Libby is a pretty good thing to go with. You could take a libby in termie armor and ea as well.
All in all, a nice vanilla marine list.
Since you seem to know what you are doing (from the list building aspect at least) you should do just fine even with the 'sub-par' captain in the list.
But really, libby or cassius is a no-brainer. I would lean toward the libby myself.

Good point, I never thought of using the Librarian defensively before, I only placed value on the offensive uses of Librarians. This is making me definitely want to take the Librarian for I loath watching the eldar casting fortune and doom on their units whilst I stand there helplessly not being able to stop them in any way.

Librarian in terminator armour very attractive choice and for just 25 extra. Too bad the Terminator Librarian is so ugly (thus I shall use one of my GK Termies which I shall paint to the Ultra scheme).

Personally I think two full squad of tacticals is enough at 1.75k the sniper scouts will not do any damage at all really. They will average one wound/turn and thats before saves...and thats assuming you dont go to ground for the +2 save. I prefer CCW scouts even for holding the home objective (if I have to chose)
If you do opt for the termie librarian then always go for the storm shield. The storm shield gives you a ~50% chance of saving a PotW attack, normal termie armour will only save 1 out of 9.
Personally I stick with a PA Libby most of the time and just keep him in the rhino/LR ect. That will keep him safer and also extend then range of Null ZOne and the Hood.

Dump the scouts.
At that point, you could actually get a libby in pa and cassius.
If not that, then get 2 more termies and 2 combi-meltas for the tac marines sgt's.

Haha scouts get no love from you guys aye.
Will they not be a cheap distraction, soak up some firepower?
The storm shield would be good but so darn expensive, no? Yet what situations would you yourself use this loadout for the libby, tedurur?
Wow... having Cassius and a Librarian with the Hammernators would be death on a stick. I'll take it!
I am grateful for all you guys sharing your wisdom, its amazing how I keep learning something new here.
