They are different formulations of paint, although though do share colors. "Model Air" has much finer milled pigment, and comes pre-diluted for airbrush use. You can use it with a brush though and it goes on like a dream. "Model Color" is more opaque, has less finely ground pigment (although still finer than GW), and can be airbrushed if properly thinned. The only reason to chose "Model Color" over"Model Air" is when a color isn't available in the Model Air line. Model Color's range has 208 colors versus Model Air's 72 colors so you'll probably want paints from both lines and probable Game Color as well.

Also, the Model Air metallics are far superior to the Model and Game Color ones. The only thing better would be the Liquid Gold range.
