I originally got in this hobby for the models and the fluff, since the aesthetic and Dawn of War were what drew me into this.

I have 2 armies. A Chaos space marines and a Dark Eldar (got the DE second hand for really cheap). Ive decided to use the Dark Eldar as my gaming army, and using the Chaos marines as a total display army, in which every model will be converted.

What i plan to do with the CSMs is to have roughly 500pts from every original traitor legion, but focusing on the "cult" legions (World Eaters, Death Guard, Thousand Sons and Emperor's Children).

What I can't figure out is what legion to make the vehicles? Making vehicles for every legion is going to put too much strain on my resources (the project is already pretty big, its 4500pts) so i want to focus them in one legion.

which legion would give me the most interesting conversion projects for the vehicles?

1k sons or if you want to wander from planed Cults, I say go for Iron Warriors or Red Corsairs

I actually wanted to do the same with my Chaos force except instead of limiting myself to 500 pts. of each of the main traitor legions I was just going to just use a few squads from each (Khorne Bezerkers as World Eaters, Plague Marines as Death Guard, Noise Marines as Emperor's Children, Thousand Sons as....Thousand Sons). I wanted to actually get all the forge world doors for rhinos and any extra gubbins I could get to make them more unique and display worthy. For your situation though I would just make the vehicles as neutral as I could or go with Black Legion.

I think alpha legion would have some cool conversion concepts, either that or Word bearers...

I'd think Black Legion since they're kind of all-encompassing. Alternately, assign vehicles where appropriate to each legion detachment. Vindicators for Iron Warriors and so on.

I did think about that, but the only things i could come up with was vindicators and predators for iron warriors and defilers for world eaters. I'm not sure where the others would fit in, since they are abit generic, or aren't really associated with a specific legion to my knowledge,.
