Definitely not the most meta oriented list in existence. Cryptek goes with the Immortals and jets around using the veil. Overlord joins the Lychguard in the scythe. Monolith deep strikes in and disembarks warriors while blasting away. Destroyers go tank hunting. Wraiths look for a nice juicy infantry squad to cut up.

Any reason you're only using 7 Immortals? If you're planning to use them as efficient as possible, surely 10 would be a more appropriate number?
Oh, and are you kitting them with Tesla Carbines?

Whoops, forgot to mention that they are kitted with Gauss Blasters.

I originally decided on 7 because of point constraints. However, I realize now that I can drop the lone Tomb Spyder and fill the squad up to 10 Immortals for exactly 51 points which would level the whole army at 2000 on the dot.

Wow, Gauss Blasters? Remember, these are no longer assault 2 - You have to land within 12" of the enemy to shoot with your Blasters. And that's charging range for them, always, not to mention dangerous.
If you wanna to do the deepstriking Immortals-tactic, you either have to use Tesla Carbines so you can strike down at a safe distance and shoot them.
Either that, or let a Phaeron Lord join with them.
If I were you, I'd drop the Spider for the 3 lacking Immortals, then either
A: Switch to Tesla
or
B: Remove one unit of Warriors and add in an Overlord with Phaeron in the Immortal squad.

I believe that you are right. I forgot that Gauss Blaster Immortals wont be able to shoot at 24" the turn they Veil. (The long time 3rd edition Necron player in me is still getting used to the new weapon stats). Well then, Tesla Carbines are in.


Will AP - be a big hindrance with the Carbines?

Also, will it be better to have my warriors in four squads of 10 or two squads of 20?

I don't think the AP- will be of any hindrance. With the extra hits, the only armour it will be of difference against is 4+, possible 5+.
Against Space Marines, the Tesla Carbine is better. Against terminators too. Against things with worse armour saves... They'll die well due to their bad saves.
Overall I consider Tesla to be the better choice.
