What is the best lore for a Knight heavy Bret list? And what is the best way to run ladies/damsels?
I ussually run a lvl 4 Lady with Channeling Staff and lore of beasts. This gives me a +5 to my channeling attempts, and a -1 to the roll that I need for the spells.
But what do you guys run and why?

A lot of people like Beasts, and it makes sense. The buffs are fantastic, really.
I like Life, personally, but Life is a lot harder to play well, as the amount of spells you need to get off for the build to work successfully seriously hamstrings the build.

Lances with a Wyssan's or two plow through just about everything. It's also a great spell to help out a unit of Knights stuck in combat for more than one turn.
I've also been told that Paladins and Lords like to turn into Savage Beasts at first opportunity.

I think you're confusing two different rules here. The Channeling Staff gives +1 to the channel attempts you make for extra power/dispel dice, not casting rolls. You get your level (+4) to your actual casting rolls, but not channeling for extra power/dispel dice.

I've heard beasts as well- lots of character buffs fits great with brets.
Life's an interesting idea, but overused in other armies, so people are used to facing it... unlike beasts (for the most part).

I played a tough game with a guy using a lvl4 heavens and a lvl 1 beasts. Rerolling all those 1's on Armour saves saved his hide more often than I can remember.

Hmmm, i'm just not sure if thats the best route to go.
The main issue is that most enemies and attacks are going to be reducing your saves by at least one.
Not saying its bad, I just feel like being T8 or having a 5+(4+) regen save will be more usefull more often.
That said, you could go Heavens and Life and ditch beasts all together(or you could spend alot of points on casters and have all 3)

Life has the obvious virtue of bringing back models; not an minor point. +2 to +4 T on an entire unit is also nice. However, Life is also rather conditional. If you don't get Throne of Vines, it is somewhat underpowered. If you don't get Throne of Vines off, you are at a disadvantage. And the Regen spell does the Brets little good, with their (almost) armywide Ward save.
Heavens does some nice things. The buff allows rerolling of 1s, making Rubber Lance syndrome less likely and helps preserve models. The hex pretty much eliminates the threat of Poison and Killing Blow. The ranged damage spells help whittle down enemy units to a more managable size (and Comet of Cassandora is the best way to deal with massed batteries of warmachines).
Beasts can be absolutely beastly. First, since most of the army is cavalry, the buffs are easier for us to cast. Wildform affects a whole unit, giving +1 T&S. This doesn't sound like much, but it is 16% less armor saves needed, and 16% more wounds inflicted. Better yet, being the default spell, multiple casters can have it, and use it on the same unit. Get two or three cheap damsels and go to town!
In higher point games, consider the possibilities of 6 Paladins, no magic or vows, and a level 4 Beasts caster with Savage Beast and Pann's Pelt. S7 (9 on the charge), T7, 6 attacks each... Toss in a Wildform for S/T 8, S10 on the charge. Take out Stanks and Dragons with ease!
