As the question says, Are deff rola's count as power? after all it would make sense.

No.

They are S10, which means that a multi-wound model which fails its save, is T5 or lower, and not immune to instant death will suffer Instant Death, but they don't ignore armor saves by any means.

Basically, with these kinds of questions, the Item in question will say that it is (Or Counts as) a power weapon, if i is (Or Counts as) a power weapon.

Re-Read the deffrolla entry and you will see that it does not mention anything about it being a power weapon.

You can also take any cover saves from area terrain against a deffrolla, since the deffrolla is not a CC attack.

So dose that mean I can kill a carnifex by insta-death?

Carnifex can be killed by Insta-death, however, they cannot be insta killed by S10 weapons.

No. Instant Death only applies when a model takes an unsaved wound when the Strength of the hit was double the model's toughness, or a Psyker activates his Force Weapon, or any other piece of wargear that says it causes Instant Death. A Carnifex has Toughness 6, so it would need a Strength 12 hit in order to kill it via Instant Death (Strength 12 doesn't exist in the normal game).

You are correct. Remember that it's for unsaved wounds.
