Why do people not use RifleDreads in SW lists, but instead WolfGuards?

Because Wolf Guard can be split up to lead units of Grey Hunters, and those Wolf Guard can carry combi-meltas and can buy powerfists cheaper than the Grey Hunters can. Think of them as the Sergeant on each squad of Grey Hunters.

I still use 2x Dreads, though.

Wolf scouts are also pretty versatile and handy and I would gladly take them over dreads for SW.

I see the argument on the flip side. You have good access to razorbacks and long fangs do you really need any more long range fire support? Then it also happens there are more important, more fun Elite options.
For a alternative why not try Iron priests with plasma cannons with your longfangs.

Lone Wolves are fun to! They are amazing in annihilation games. Scouts are funner then any dread I've used anyways.

Why not. When you are playing anything like Fangs with MLs, Las/Plas Razorbacks, GHs with melta, and Typhoon or MM speeder, why would 6 more TL autocannon hurt?
