So what does Dakka think is the best veteran doctrine? Please state why and, if you want, how you use it.

The meaning of victory is not merely to defeat your enemy but destroy him, to completely eradicate him from living memory, to leave no remnant of his endeavors, to crush utterly his achievement and remove from all record his every trace of existence. From that defeat no enemy can ever recover. That is the meaning of victory.

Demolitions is awesome. Meltabombs for everybody is really cost effective, and demo charges are hilarious. For efficiency's sake, you probably shouldn't take any, but you can have fun and still remain sort of efficient with demolitions.

Why do people say what they say? Why none and grenediers?

4+armour save for 30 points is a waste.
Demolisions in very, very limitted circumstances.
Other than that, none.

We play a game at school in which several players each bring a 200 point squad to the table, get put on randomly determined teams, and play randomly determined missions. Having camo-cloaks and snare mines gives my Veterans the ability to survive for longer than most of the MEQ squads on the table, and although they still have carapace armour, it's more to fill in points than anything else. Therefore I have to go with Forward Sentries.

Grenadiers is a waste unless your going for a themed army (in the st edition we had storm troopers as troops, now we just get expensive carapace upgrades) and is a huge drain of points in smaller games (never take it in kill team styled games 0.0). Demolitions is fun, but its only really worth taking in one or two squads tops (dueled with shotguns, meltaguns, a powerfist and a chimera) and for the cost only if your expecting to face a few tanks, and in tandem with a lascannon or two just in case. For the points a specialist weapons squad probably'll be more effectient, though the veterans do have a larger role than just being a speed bump on the battlefield than those guys.

I run veterans as Arbites so Carapace armour for me

Unfortunately that 4+ save works so much better in Nercomunda

None. For 30 pts you can...

1.)Give your squad a 4+ save, which will still be bypassed by most everything.

2.)Demolitions ability, which will see little use realistically.

3.)Get camo cloaks and snares? No, just no

I can think of SEVERAL better ways of spending 30 pts.

Power Blobs? Pass out grenade launchers and melta bombs. Make those PCS do something besides die.

Chimelta Spam? Pass out meltas.

Etc. Etc.

I'd rather spend a few points here and there making several squads much more versatile then giving a single squad a largely insignificant upgrade.

Really surprised to see so many people thinking that 5 to 4 is worth 30 pts on 10 guys. Maybe they don't see the "none" option.

Getting a 4+ save against most infantry weapons instead of getting no save is a pretty big improvement.

That said, I'm not a big fan of any of the doctrines.

I'll usually put Grenadiers on plasma vet squads, and nothing on melta vets. I like the extra survivability should my plasma guns get a little warm.
