Target
The cannon can not trace its shot through a friendly unit and it needs to be able to draw line of sight to its target, correct?

LOS. You can't make a shot that it has a chance of hitting a friendly or enemy in combat.

Use TRUE line of sight
So if you CAN see through the friendly unit (entirely possible) then you can shoot the enemy unit.

Not just friendly units in combat, but any friendly unit.
The start point cannot potentially land on a friendly unit, so the aiming point must be slightly more than 2" away from the front of the friendly unit (as per the OP's example) & there cannot be a friendly unit within 20" of the same target point, which is the maximum potential range from the 2 rolls of the artillery dice.
As already said, you do need true line of sight to the enemy

While we're on the subject- What is the arc of visibility for a cannon? Is it only 45 degrees or is it 360? Furthermore, at what point does turning the cannon to aim it count as moving (cant fire this turn)?

If you read the cannon rules snurl you will see that you pivot in your movement phase but can still fire

I believe its still 45 degrees, but you can pivot.

If i remember right, this got FAQ'd so you pivot in your shooting phase again. Could be wrong though.

all warmachines have a full 360 degree pivot and can still shoot.
The cannon can fire over friendly units and models if it can see the target point. this is important to remember, you shoot at points on the table and not at enemy units. you don't need to see the enemy unit to hit them. you could fire at a hill and convieniently hit the unit hiding behind it.
You cannot pick a target point if there is a freindly unit(or an ongoing combat) in a 20" line from that point(IE: the potential bounce distance)
as long as those conditions are met you have a valid target. and with premeasuring you can always check that you can indeed fire.
