I would like to build a Death Skulls 40k Ork list to use in games from 1500-2000 points. What I have now:

Warboss w/ klaw

9 Nobz w/ various items

30 Boyz
19 Sluggas
7 Shootas
3 Big Shootas
1 Nob w/ klaw and bosspole

3 DeffKoptas

5 Lootas

what I want:
Big Mek (I don't know what to take on him)
Deff Dread
Killa Kans
more Lootas
Trukk
Battlewagon (So many options! I have no idea)
Buzzsaw and BigBomb for DeffKoptas

What should I get? I don't mind dropping some nobs or the Warboss. I would like to stick to a generally shooty and vehicle based army for the fluff.

The best thing to put on a Mek is probably a KFF. Really necessary in any ork list.

Dr Optimal is right, KFFs are well worth it - even more so when the Big Mek is in a Battlewagon, since the KFF 6" is measured from the hull of the vehicle, greatly expanding the protective potential. So there's 2 choices right there.

I'd get some more Shootas to get that mob up to something effective, more Troops is always a good thing.

More Lootas, like you said, and if you really want to go Death Skull, get a Looted Wagon with Boomgun.

kff is awesome whatever your list looks like, with the small exception of wazdakka but I digress.

Looted wagons are not so hot.
Try converting tank models into battlewagons by putting a roller on the front.

My shooting list is 9 big guns and tons of lootas, then some boys. You can model big guns using imperial guard stuff easily enough or just use their heavy weapons directly, lootas can also be modelled this way.
I feel those cheap 2nd edition grots look quite deathskulls like with their guns.

If you want vehicles however you most likely want the heavy choices to be battlewagons.

There is the possibility that 3 lootas, 2 lots of big guns, nobs with battlwagon, boyz in battlewagon, warboss, mek with kff. Then either trukk boys or rocekt buggies to act as a distraction to the battlewagons would work well.

Why mix shootas and sluggas? Go all shootas if they are walking.
Exactly what does the nobs have? A battlewagon ride for the warboss and nobz would be good. Just go with a heavy shoota to soak up some weapon destroyed and stick a deffrolla on there and create havoc. A kannon is not misplaced either as it can be a defensive weapon.
A big mek with KFF is as already stated great.
Lootas should be in a bigger mob. Preferably 9-11.
Some kanz can support foot slogging boyz. They are good and cheap.
I'd say that the buzzsaw and bigbomb are just a waste. Don't take them.
Just one trukk would easily be picked out and wrecked. Get two at least.
And also don't overlook the humble grots for objective grabbing.
