Out of every time I have read this rule, I haven't understood it once. Do you still kill enemies if they attempt to move out of the way? How many enemies do you kill when the enemy squad is attempting Death or Glory? Explain please

Under the couch

Tank Shock doesn't hurt the enemy models at all. If they pass their Ld test, they move out of the way. If they fail, they Fall Back.

Only the model that attempted the Death or Glory attack is hurt by the tank.

You declare your Tank Shock, and make move. If you reach an enemy:
a) Enemy takes a morale test.
b) If failed, enemy immediately falls back.
c) If successful, they move out of the way and let the tank pass.
d) If successful 1 model that was in the path of hte tank may attempt DoG.
e. If failed, model is removed from play.
f. If successful, vehicle is stopped.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

If they pass leadership then no one dies and you move past while they just step aside.

If they don't pass leadership then they run to their closest board edge.

If they attempt the Death or Glory then only the single model who attempted it dies if it isn't successful. Everyone else is OK and you move past.

I hear people use this movement to bunch enemies up to hit with templates, how is this done though? Do you stop the tank in the middle of the enemy unit?

Yes, because otherwise the enemy unit doesnt move

Tanshock into middle, this usually then pushes the unit all to one side, nicely bunched up for any flamers carried by the vehicle or the unit inside it

Very, very funny to drop off grey hunters with 2 flamers right next to a tank shocked squad of gaunts, ah burning gaunts, the smell of victory.
