I just saw a MW Tourney today and talking to the organizer, he said Eastern Front book is the best book for the German MW army builds. But with V3 over the horizon should I just wait for future V3 books or shell out for the Eastern Front? Will the information in the Eastern Front book still be valid for V3?

Likely it will be subject to errata of some kind.

I wouldn't expect them to release a new Eastern Front for a while yet. The current edition was released just a couple of years ago, iirc. The current book's barely had time to get settled in.
