Maybe I live under a rock when it comes to FoW news/rumors, but I'm wondering whether there will ever be something in a similar vein of mid war monsters for late war? Is there not enough material or is this when people getting insane with silly concepts that even under flexible historical fiction, would prove to be unusable?

The last word on anything like this was some leaked info about a 1946 expansion to the game.

I don't play FoW but I would totally buy a 1000 Ratte or a P 1500 Monster if they made them.

I hope not, but it's certainly possible.
People were talking about the possibility of "Late War Leviathans" when MWM came out. There's certainly a lot of potential for it, with the Maus and the designs for the Löwe and other stuff, and whatever everyone else was doing.
It's not my cup of tea, but I wouldn't be overly surprised if they did something with it eventually.

I'd personally like to get my hands on a British A39 Tortoise
Perhaps when they 'finish' Late War.

Oh dear. Pershing tanks etc and V3 Rockets taking out a 6x4 table.... noooo
I would hope that BF will bring out a defence of Berlin battle book to cover the last weeks of the war in Europe. That would open the way for all the last minute "innovations" (desperations)....?

Midwar monsters was somewhat of a flop so I don't expect to see anything approximating Late War Leviathans from battlefront any time soon. Few if any people bought into the concepts for the midwar monsters to make it viable cashwise. If MWM had rocketed off in popularity and high sales I would expect that LWL would have been a done deal, just a matter of waiting for it to appear. I wouldn't hold me breath for it now, though.

I already have a Maus, which I occasionally proxy as a King Tiger in regular games.

I'm sure that it'll get done eventually. There's just too much high-profile stuff that didn't quite make it into the war (JS-3, Maus, etc...). MWM had the disadvantage that no one had ever heard of most of the vehicles (and the ones that people were aware of actually did fight in the war - either in tiny numbers, or during the Late War period). Late War Leviathans (as it's been popularly referred to - LWL for short) has the advantages of -
1.) There are plenty of players who gravitate toward Late War because that's where the biggest tanks are. Such players are natural targets for a "Monsters" release.
2.) Many of the possible LWL subjects either came into service just after the war (i.e. the new British and Soviet tanks), or had at least reached a proto-type stage by the end of the war (i.e. Maus). People are naturally drawn to that stuff. LWL is likely to sell better than MWM because of that.
Now having said all of the above, the single thing that would make me the most likely to buy LWL would be if they got rid of the non-historical "usage history" fiction that Battlefront included in MWM. If the unit had an actual service history, then include it. If it never left the drawing board, then state that. I don't want to read nonsensical accounts of American heavy tanks in Italy during 1943.

I've wondered if it would make sense for BF to do a sideline 'fourth era' (or is that 5th?) that has a lot of prototypes straight through to 'Weird War' stuff that is isolated from the core game.

Working on someting you'll either love or hate. Hopefully to be revealed by November.
