I have enough Death Company and Assault Marine bits to make 8 Vanguard Veterans, but I am not sure what to equip them with.

I want jump packs for Herioc Intervention for sure. I am also thinking lots of Melta Bombs and a couple of Storm Shields. Maybe a couple of power swords.

That would be 2xPower Swords, 8xMelta Bombs, 2xStorm Shields for 350 poijnts.

Or I could go 1xPower Fist, 7xMelta Bombs, 2xStorm Shields for 340. Less power weapon attacks, but more punch with the power fist.

I am thinking to deepstrike in and multy charge tanks and infantry. Melta bombs on tanks and power weapons on infantry. Hopefully wreck a vehicle and stay locked in close combat so I can't be shot.

Do I want Melta Bombs on my Storm Shield models? 2 Power Swords or 1 Power Fist? Lose the Melta Bombs?

What do you think?

I would say take Jump.Packs and Meltabombs for Tank Hunting and throw it a few Power Weapons.

At least one PF/TH should be in the squad. Good for tank popping

Well VV's tend to get expensive if you go crazy on the upgrades. and the Sarge already has a Power sword.

If you are looking at a unit of 8, take jump packs, 1 Power Fist, and 4 melta bombs, for a total of 300 points.

300 points is expensive for a group of 8, but they should kill their points more than they do not with this loadout.

The thing is why are you taking Van Vets in the first place? They're waaay too expensive for using on mere infantry. You would rather have normal assault marines for that. To use VV effectively you need to make full use out of the HI rule, so disrupting the enemy's key units like Long Fangs or basilisks, etc.

I use 5 VV in a squad, 2 PF maybe a couple of meltabombs that's it.
