I got a chance to attend my first 40K tournament today, after watching a few in store games. It was really cool, other than a couple of players that almost got into a fight over
a game. True story.
I have been contemplating on which army to start, and have narrowed it down to the following:
Space Wolves - I really like the look of the models, and the fact that there fluff seems to be really cool. It seems to be a really
flexible army with a lot of options.
Chaos Daemons - I saw 2 daemon armies at the tournament, and I love the models. The players seemed to be doing well
in the actual games.
Orks - I love the fluff of the army, and it just seems like so much fun having all of the crazy vehicles and gizmos.
Any thoughts on what would be a good army to start with, that would provide a lot of options to expand in the future?

Go Orks, fun to play and cheap to pick up. You can always find some one around with the orks from AoBR. You can get those pieces on the cheap.

All three of those armies have a pretty different play-style.
Have you thought how you want to play your Army? Do you like resilency? Do you like taking models off the board in handfuls, but having tons still left?
Assulting? Shooting? All things to consider.
A big problem with Orks, is a lot of people grow weary painting 100+ boyz. you have to be pretty dedicated.
Orks and Space Wolves are both pretty strong Codexes. Orks really have a fun personality to them.
I can't say I'd recommend playing Daemons for a first time player. They are a bit special.

Right here I'd just recommend daemons. They're not at the best place right now competitively, but you can make them work. To me, loving the models is the most important part. You're going to be building and painting and converting models in your spare time, so make sure you love the models you're doing it to. If you don't, you won't find this aspect fun. You can make any army work for you on the table, you can't make yourself enjoy working on models you don't like.

Right here I'd just recommend daemons. They're not at the best place right now competitively, but you can make them work. To me, loving the models is the most important part. Thanks man. Do you have any suggestions on initial models to get for a good list?

You'd be better off asking daemon players - I'm a Tyranid player. Try the tactics sub forums.
That said - while I'm flattered you go straight to my opinion - keep asking beyond my opinion. I was merely saying, to me, liking the models is more important than picking something competitive. You may hold a different opinion.
Something else to do is find a local GW if you have one, and ask if they have a small daemon army you can try. Most have every army sitting in a box somewhere. Ask them to give you an small game letting you play daemons.

You should go deamons. You will be having a too steep learning curve. Frustration will eat your love for the models.
Even worse nobdoy knows if there will be a new codex Deamons.
Even worse it much more expensive than Wolves (Marines) or Orcs, because you can grap cheap Blach Reach or eBay modells, and you should start (painting) with the cheapest models in your reach.
