HQs are relatively expensive and generally not terribly more effective than a regular crisis team. If he wants to devote extra effort to remove an overcosted XV8, by all means let him! Move your
HQ away from your force and make your opponent chase him.
Shas'o are generally not worth the extra points, unless you plan on sending the
HQ into close combat. You can give your '
el a Targeting Array to get BS5 and save some points.

Deathrain:
TL Missile pod + Flamer or Blacksun Filter. Alternatively, a
Deathrain+ is
TL Missile pod + Targeting Array. It's cheap, has range, and is the standard anti-transport unit.
Fireknife: Plasma Rifle + Missile Pod + Multi-tracker. Most Tau lists use mostly or all Fireknives. Has range and is effective against
MEQ.
Firestorm: Burst Cannon + Missile Pod + Multi-tracker. Not everyone likes these. Slightly more expensive than a
Deathrain, but over twice the number of shots.
Helios: Fusion Blaster + Plasma Rifle + Multi-tracker. Can be an effective tank-hunter, but they are also really great against
MEQ/
TEQ.

Typical Tau lists in 5th run minimum size squads of Firewarriors. They may have great guns, but they can't shoot very well. The points saved is almost enough to afford another
Fireknife, which is more resilient and kills marines much better than a full squad of
FWs.

Broadsides are generally more reliable than Hammerheads. They shoot more accurately, and can be brought in greater numbers. With a 2+ save and a 4++ from shield drones, it takes a considerable amount of fire to get rid of them. Plus, the entire Broadside team can benefit from the markerlight hits, which usually means 2 or 3 Railgun shots at BS4/5 and no cover save. Hammerheads still have their place, however, as they have greater mobility and have one of the few blast weapons in the army.
Having mobile Railguns is important. It's not difficult to position vehicles behind cover, and sometimes it's possible to get them out of
LOS. Being able to move 12" can sometimes be enough to deny your target a cover save.
