At a tournament today with my Mech Guard. A deffkopta assaults one of my Chimera and does nothing. Before I move away in my movement phase, he claims he can hit and run away during his assault phase. So I was just wondering, how does Hit and Run work with vehicles?

The rule seems pretty straight forward, providing they pass the Initiative test they move 3D6" in a straight line away.
The only tricky bit is that the rule says the units have to be locked in combat, and as vehicles can't be locked in combat ......... bit of latitude required here tho' why else would Deffcopta's have the rule?
3D6" of movement seems to imply it might never apply to anything other than a vehicle ?

Hit and Run requires that the unit be locked in combat in order to use the ability (p75). Vehicles cannot be locked in combat (p63).
The rules interaction here seems pretty straightforward to me

Also, if the kopta was a vehicle, since it has a WS it can use Hit and Run if it assaults another model with a WS.
