What's the correct way of doing these?
I've been trying using the GW superglue brush, but I only have around a 33% chance success rate with it, I tend to just get huge glomps.. or they go flat.
I get my best results when it's an upward facing surface, I've wiped the excess off the brush and I do just teensy little prick with it, but are there other ways? Using a needle perhaps?

I spray the surface with a little quick dry spray. Then add the super glue on that. It makes it so when the glue hits the surface it dries and keeps the dome shape. You could also try plasti card. That works a lot better that show results each time.

There are lots of ways to make rivets.
hen it comes to the glue route, I use white glue (PVA) and tiny needle. The glue holds its shape better than superglue and it usually only takes two or three passes to build up a nice looking rivet.

If you're using super glue (or any glue) a brush is not a good applicator. You're thinking in the right direction though. Your best bet is to pour a little bit out on a tray or lid and then use a toothpick, needle or other small pointed instrument to move drops of superglue from the tray onto the model.
Also, you should probably use a thicker. Watery superglue is great for some other uses, but not always for rivets.
Best of luck!
