what's the canon for bolter round coloring? is it like modern ammunition where you have a brass-colored casing and then a different colored load (e.g., dull metal for a non-jacketed round, etc) or something different? I've tried painting them a few different ways (brass casings, boltgun-metal casings, silver loads, etc.) and I'm not super keen on any of the color schemes I've tried so far.

Gold! Each shell is loving gilded and blessed with sacred oils or some such malarkey. You should be doing complex freehand litanies on each individual shell.
Or alternatively, be sane(r) and paint as you like. I prefer something that looks like ammo, so brass / gold, sometimes with a coloured load for contrast.

I always do them in a brass colour. Theres no way they would be brass, but its just something we associate with ammo so i find it looks good.

Depends where it was manufactured. There can be a lot of variance in bolt construction depending on the pattern and who made it. Some are gilded and inscribed, others use traditional brass, and still others are entirely caseless. There is very little standardization in the Imperium.

as a bolt round is a self-propelled mini-rocket you can really paint them however you like.

Brass color, Steel, OD, or black are all reasonable.

oh well, at least the lack of standards offers up opportunities for creativity  think I'll go with brass casings and vary the tips as needed. cheers for the ideas!

Nobody really knows, and it's subject to change as the fluff states.
Just go by real-world standards and make it brass and/or gunmetal so it looks like bullets.
