I recently ordered a box of 30 Mantic Zombies from miniwargaming.com from my Dakka Painting Challenge winnings. I read some reviews and although they are good quality sculpts they suffer from lack of poseability and variety. My question is this: can you link me to other products that I can use to convert my horde of zombies? Additional undead hands and heads, for starters.
Another question: I was thinking of using said undead as a core of a new army. Any good ideas on what they can counts-as for in 40k?

Mantic ghouls are 100% compatible with them, though that only adds in two body types and a few extra heads (the ghoul sprue is a tad small)
If you're making more modernish zombies, these guys can be mixed with warlord's bolt action range to make nazi zombies and the like. You could then mix this with studio miniatures german zombies and perhaps WGF upcoming germans to have a horde of undead

If you want to go 40k with them the old Eye of Terror codex is an option, though depending on the weaponry they could pass as traitor guard specifically Nurgle themed zombie guard.

Hm, how about non-modern options though? I'm also courting the idea of starting WHFB and doing a Vampire Counts army.
I was thinking of Orks to represent a zombie horde for 40k (WAAAAGH! would be BRAIIIIIINS!), although they will still need to have some sort of ranged weaponry.

Non-modern would be the Eye of Terror book where in you can have a zombie horde if I remember correctly, I'll have to check. The Orks sound like a decent modern comparison though don't have to model guns and don't have to chose to shoot anyway (though you could get some complaints, then again there is always someone to complain about something) the WHFB idea is also a good one and would be easier over all. Not to mention they'd probably look better than the GW zombies, though I suppose you could mix them all together for a more diverse horde.

Zombie counts-as Orks is an awesome idea.
Might Nids be a better fit though? Warriors or Genestealers or other specials could be represented by "special" zombies ala Left 4 Dead. As to diversity, I would use a mix of Mantic and GW zombie bits, maybe a couple of metal zombies from Heresy Miniatures or somewhere thrown in for good measure. I think Heresy actually DO a Left 4 Dead specials pack with the tank, and others from the first game (I can't remember their names unfortunately...)

Just a week ago I was thinking about doing a counts-as-nids army with zombies. You know, 60 gants (zombies) surging toward the enemy. I wanted to use ork bits to converst bigger zombies, who'd count as warriors. And of course a crazy scientist in his converted dreadkight/talos zombie maker machine, bristling with needles and syringes wich are filled with bright green liquid. Hed be the swarmlord or whatever.....
hell, I'm building this army!

I'd suggest buying the Mantic stuff for the zombies. They're a whole lot cheaper compared to GW AND I think they look far better and less comical.

The tyranids idea is pretty sweet. I know there are also apocalypse rules for fielding a horde of zombies led by typhus or another nurgle commander:

You could probably use these rules in a casual/theme game of 40k as well.
