Unless you've encountered a specific rule that targets individual models, leftover wounds are held by the unit, not individual models. You currently have 5 wounds, which should result in 1 model removed and 2 wounds leftover. The next turn, when you take 5 more wounds, you add up the unsaved wounds and leftovers (7) - removing two whole models and leaving 1 wound on the unit.
If you have encountered special rules that wound individual models (leaving aside the
DT issue for now), the requirement that you remove whole models when possible overrides the rule that you get to choose which models to remove. So 5 wounds results in the three specific models that were wounded being removed. You cannot choose to remove other identical models, it must be the three specifically targetted.
