Seeing as how I haven't yet played a game with my tau, is it worth it to be able to switch between rifles or carbines? Or will I be pretty much be sticking to one? Or should I just take a squad of each?

Don't bother. You'll want the rifles pretty much every time for the added range and shots, as not much really gets pinned these days.
