I am wondering if there are any efficient ways of getting up skills in Skyrim, looking particularly at speech, alchemy ( I don't want to waste my ingredients which do include a human heart!) and pickpocketing. Also, is there anywhere I can buy soul gems?

Soul gems are sold by pretty much every non-hostile mage and if you put a soul-trap enchantment on your primary weapon you'll fill hundreds of them just by clearing a dungeon.
As for alchemy, the exp gain per potion is proportional to the price of that potion so while selecting ingredients look at the displayed price and try to maximise it. Fortify health potions sell very well, especially when you use giants toe. Potions with multiple effects (even bad ones such as fortify health and drain health) sell for much, much more than potions with single effects.
Selling these potions or enchanted weapons will get your speech up nice and high.

Theres also some "glitches" for upping some of those skills indefinitely, youtube it.
I made a thief with a lot of perks in pick pocketing, Ill admit, it was silly with higher perks

As mentioned thee is a "glitch" which allows you to instantly get 100 alchemy and be able to make potions which boost MILLIONS of percent. Speech, theres a guy in the black-briar meadery in riften who you can repeat the same speech check over and over (not sure if thats been fixed tho). Any magic skill, enchant an item to reduce the cost of that school by over 100% (you can get 100 alteration in 5-10mins just by taping down your magic button and putting on telekinesis.) Block you just stand in a corner and tape your block button down and let guys hit you (make sure they arnt dealing any damage though). Ill admit I myself am having difficulty with pickpocket.

Thanks! Also, what out of Magic, Health and stamina should I get up? I usually have a one-handed weapon and magic in the other hand. I heard that I should wear light armour for this class?

Because of the infinite magic enchantments, I wouldn't focus on that. I try to find a compromise between carry weight and damage endurance. Stamina is not a big deal unless you are going to be using 2H weapons/using a shield, if you are focusing on light armour carry weight should be less of an issue. If you are going for the light armour approach, health should be your main concern. (of course you can enchant stuff to have infinite carry weight and infinite health but that takes all the fun out of the game)

Speech -
Join the thieves guild. Commit a crime. Bribe the guard. (raises speech a ton)
Pickpocket the money off said guard.
Travel to another city, rinse and repeat.
