I have all my ultramarines ready to assembled and painted but still haven't figured out what company I am going to play. I remember someone telling me of a company that was designated "Tyranid Hunters" and from what I am told this company uses bits of Tyranids on their weapons and armor, is this true? If so what company is this that does this? Any and all help would be greatly appreciated guys. Thank you in advance.

The Ultramarines hate Tyranids more than your average chapter of Marines, due to their war that culminated with The Battle for Macragge. In this, their entire first company has since been wiped out. It's been rebuilt since, and much of the new first company is made up of Marines who have spent a lot of time fighting Tyranids. They used to have a unit called "Tyrannic War Veterans" back in their old codex, but Sternguard veterans serve the same purpose. There isn't a legal way to field an army of them, but Pedro Kantor (you can counts-as him as the first company captain of the Ultramarines or whatever) does make Sternguard scoring, so they can at least capture objectives.

The only legal way to field the entire first company would be in an Apocalypse game, so I would suggest you paint up a couple units of Tyranid hunters to counts-as Sternguard and build your army around one of the battle companies, which are 2nd through 6th companies.

I'm still really new to the Space Marines so please excuse my stupidity, what you are saying is build a squad of Veterans (which I can use Tyranid bits on) and then build a company around them?

Basically, as of the new codex the Tyranid Hunters don't actually exist in-game.
However, you can use Sterguard veterans.
Now if you wanted to build a force that are good against/specifically fight Tyranids SRM's idea (A good one IMO) is to use a *Counts As Pedro Kantor and have 3 squads of Sternguard Veterans.

I myself would go for something like this,
HQ
Pedro Kantor

Librarian

Elites
Sternguard
Sternguard
Sternguard

Troops
Tactical squad
Tactical Squad

Heavy support
Predator (Las or Dakka)
Predator (Las or Dakka)

I'd put any infantry into drop pods or Rhinos/Razorbacks...

*Counts As is when you use a Character (Such as Pedro Kantor) but with a different model and/or name however you still use the same rules.

Do you have the Space Marines codex? It has a very detailed breakdown of the Ultramarines 2nd company if you want a reference on how to build one. A standard company is as follows:
Captain
Command squad
6 Tactical squads
2 Devastator squads
2 Assault squads

A veteran company would also have a captain and command squad, but would have 10 squads of veterans. These veterans could be in Terminator armor or power armor, which would make for Assault Terminators, Tactical Terminators, Vanguard or Sternguard veterans in-game. A company is a very specific organization of Marines, and I feel like you might be confusing a company of Marines with a regular army of Marines for gaming purposes. To actually field a proper company of Marines you'd be well over 2000 points, which is bigger than your average 40k game.

Modeling/fluff-wise, you could say your Marines are experienced hunting Tyranids and decorate them with badges that reflect that, trophies, and bits of dead Tyranid where you want them. To reflect it in-game, use some Sternguard veterans.
