It looks like you have a lot of confliction in your list. For example, you have a Demolisher witth sponsons. It has a short range and needs to be moving toward the enemy the whole time. I would put the sponsons on the LRBT instead, because with its greater range it can sit in the same place and shoot all of its guns. The veterans really need a transport, they are too expensive and squishy to be left in the open, if you're going that route you'd be better off with more blob guardsmen. On the same note, I wouldn't add a heavy weapon to your vets, because they are generally going to be the more mobile force of your army. If you drop the lascannon you're about halfway to a chimera, and only need to find 35 pts somewhere else for it. I would drop the power weapon from your CCS, because they should never really be in combat. The 4 flamers are a great idea though, because they can toast anyone that gets too close to your blob. Speaking of your blob, I like what you did with it. The GL AC combo works wonders in my book. However, you only gave your commie a PW. I would either go all out (Commie and Sgts with it) or no PW s at all in the squad. I would say lose the Stomtroopers - they're basically like more expensive veterans and a point sink in this Codex really. Finally, you may want to ditch the sentinel. I'm not saying they're bad, but you can't take one alone. It's not redundant enough to be a threat. Again, all in or not at all.
These are just my opinions and experiences though, and I do not discourage you from playing your own list and being creative! Experiment, what you find may surprise you!

Bottom line though - specialize more, and trim the fat. Lose the Lascannon, Stormtroopers, Sentinel, and Power Weapons. You should have enough points for a Chimera for your vets and maybe one or two of your command squads. Alternatively, you could spend the points on more PW s for your blob, more sentinels (2 or 3 can do pretty well in a 1K game), or just flat out more guardsmens!

Starting from the top.

CCS - Plasma pistol in this squad isn't an effective use of points IMO. It'd be smarter to give them an extra melta, and a transport to move them around.

Troops - Drop the power weapon on the PCS. They DO NOT want to be in combat. Flamers are fine though. Not a fan of gunline blobs. I use them as an assault unit as its the best one in the Guard codex IMO. This would entail finding points for power weapons on the sergeants, and taking something like melta's in the IS special weapon slots. Vets are a good configuration for ranged support IMO. You might want to consider a chimera for the vets to act as a rapid response unit.

Stormtroopers - If you're going to run these guys, do so with 2 melta's rather than splitting the special weapon fire. They work well in a suicide anti tank role with the 2 melta's, as they can deepstrike behind an enemy tank and nuke it.

Fast Attack - Drop the lone sentinel. Not worth the points it takes up.

Heavy Support - LRBT looks fine. Drop the sponsons on the demolisher though.

Ok so few things to get changed............

Could I put the vets in chimera with meltas instead, and put lascannon and 2 plasmaguns on CCS and keep it stationary?

Tbh I don't really like the idea of infantry blobs, but most people really rate this tactic. Any way I could make them separate units of 10 guardsmen and use them just as efficiently?

I looked a lot into the load outs for my Leman Russes, especially the Demolisher. Majority of people vouched for the lascannon and plasma cannon sponsons, but I didn't want to make it that expensive. Another idea was to have sponson bolters which could lay down some anti-infantry firepower as the demolisher moves forward to get the cannon in range?

I have no qualms with getting rid of the stormtroopers, I just liked the idea of them deepstriking behind the enemy armour

And lastly, I already got the Sentinel in the battleforce and it's painted so I'll be using it regardless, no matter how crap it is lol but i dnt wanna fork out £18 for another crappy sentinel to use alongside it haha I coud just get rid of it for competitive play and chuck it in for fluff lists

You have the right idea but I just don't think it brings sufficient firepower. If I were doing a competitive list at 1000 points along your lines?

Your bringing 5 las on your infantry and orders. The 3 las on your tanks makes them a good av12 hunter. The 3 battlecannon shots also packs a punch against infantry formations. If anyone gets too close you got power blob light and a demo charge to plop down. Plus it has two mobile ac's to harass the flanks. Sents are really good for taking out things like vindicators and preds with their av11 sides. Don't let the net people sell them short. This is especially true at 1000 points.

A note on the Demolisher - if you take sponsons on it, they can't fire if the tank moves. That's why I recommend you keep them on the stationary tank, becuase if you want the tank to keep moving around the sponsons will never get the chance to fire.
Also, make sure to take advantage of your orders!

Ok so I've decided to make a semi-mech army and get a chimera each for my CCS, PCS and Vets by dropping the Stormies and i'll maybe stick two lascannons on my russes.
