So I start an army, love it, read the lore, fall more in love with it, start painting, continue to love the army.
THEN...
I read about another army...love the lore, love the models, want the models...so I buy them....
THEN...
I have 2 armies started, neither finished, and the third army comes a long...and this one is just as cool as the last two...and I want it too...
wtf do I do???? There are far too many miniatures in this market to paint...but I want to be like Ash Ketchum and get em all.

A problem encountered by pretty much everybody at some stage or other. Strength of will is really the only solution. Either you can stick to a project or you can't.
And that's not me being judgemental as I frequently abandon new army projects myself
The best I can suggest is to buy a single box of basic troops for your chosen army and try to model and paint them to a decent table top standard in a month.
If you succeed, then you have an indication as to whether this is an army you should invest in.

Money... lol
I've got my armies built to the point that splash releases are the only thing that will interest me. Sure I might like the look and power of Necron or Grey Knight armies, but I don't want to buy them, the same goes with the rest of the Warmachine and Hordes factions I don't have... I like the look of them, but I have my armies and I'll just continue to paint them and paint them, moving between them as I get bored.

You like to collect armys correct? Well to me a army isn't 'collected' if it isn't finished, having a bunch of grey models, stuck together or on a sprue isn't an army. So finish the one your already own!
You'll enjoy your collection more as you will take pride in your painted models than you have worked over. Also you'll become a better painter so when you get around to getting another army you can use what you have learnt to make an even better one,

Do you play much? Any of the armies you have you don't like playing?
Maybe focus on the ones you like playing and hold off spending on the armies you don't like playing.
Like many here I try to finish painting the stuff I do have before picking up anything although that never works. But I do really try.

What stopped me?
Money (lack of it).
The fact that I don't automatically like ALL NEW releases, just because they are spikey and new. I have a very specific taste towards minis and most of them just do not appeal to me (this is by EVERYONE, not just GW. No single miniatures company has an entire line of miniatures where I like ALL of them.)
So I just stick with the ones I like the looks of, mostly.
I started with Eldar back in 1987, added marines a year later when friends were sick of losing to them (because they weren't orks and chaos was just evil for its own sake). Imperial Army followed (became the guard in 2nd ed). This trio continued on its merry way until 3rd ed, when GW released the Grey Knights as an army (in previous editions, a squad of GK terminators WAS an army).
This is still where I sit to this day. 4 armies.Whilst I might like some new releases, in order to add that army to my list, due to space limits, I have to get rid of one that I already have - and I don't like any of them more than the ones I have.
I might get a model or two, but not an army of any of the others.

I stopped with Orks because I'll have more to do than I can ever possible finish. Especially with all the kustom konversions.
I DID help my wife get in to Daemons though.
