I'm relatively new to the game and i've been playing 1k vanilla marines. I have a squad of regular terminators with an AC which i have been deep striking, and so far they have worked out pretty well for me. I have a squad with a tele homer so that they turn up where i want them and shooty shooty the bad guys.
Now i'm expanding up to 1.5k and i'm going to swap out the regular termies for assault termies. Trouble is, with deep striking they wouldn't be able to assault when they arrive and i'd lose that extra attack. Would i be better off running a LR as a dedicated transport for them and assaulting from there?

You could always play Blood Angels and then Deep strike your land raider like a boss.

Land raider is a huge target at 1.5k but it is the best use of assault termies. You are absolutely right about the risks and the disadvantages of deepstriking them.
Two caveats: they form a good meat shield; Shrike can infiltrate them.
So they can definitely have a place at 2k but right now maybe look at cheaper options.

Yeah the LR and terminators is a large points expense, i'll maybe stick with the regular termies till i boost to 2k then.

I run a LRR with 5 TH/SS assault termies in at 1500/2000 points, which often gets first turn assaults against the enemy, and pretty much acts as a meatshield, and have never not made up thier points, though that may be because I rarely fight hordes, where they aren't as effective. The LRR is also very effective at taking out enemies such as foot slogging space marines, where the two AP3 flamers really come in useful. The only time they haven't killed more than they take is when I assaulted them into 20 beserkers and abaddon, rolled fantasticlly bad, and died 3 turns later after some bikers joined in to finish me off. On the plus side, I held up the entire core of the army for three turns, took out the primary threat doing so (beserkers) and then gunned the bikers and abaddon down as they tried to move out of the way of my LRR.
so yeah, definitely worth it at 2000 points, and pay off quite well at 1500.
also, I normally run either lysander or a terminator librarian in there, too, using either lysander's 4 wounds to soak up fire, or the librarian's null zone to destroy any invulnerable saves the enemy has in the area, though that is a good 600 points spent on one unit.

JB: I like the concept of a free Shrike roaming through the treetops of the jungle. I'm not sure that I like the idea of a real Shrike sitting on my couch eating my Skittles.

I did plan on a chaplain in terminator armour joining them, but actually looking at Lysander makes me think he'd be a better use.
Also, would the LRR be better than the LRC for them?

Consider the Chaplain...
Assault Terms don't have storm bolters, and the one big weakness of TH/ SS Terms is they are reasonably vulnerable to hordes. Feel no Pain mitigates that and makes them sort of untouchable. Any way you can make that happen is probably a good bet.
