For Chaos Raptors there is an option that states " up to two raptors may replace their pistol with a plasma pistol for [XX] pts per model, or take one of the following:
-plasma gun
-melta gun
-flamer"
what I am asking is this;
Can I have two models take a melta gun and still retain their bolt pistol? the wargear entry reads as if this is possible.

Indeed they can - 4 members of the unit, then if you take a champion he can also take one.
They can also scout in rhino, or outflank....

Doesn't even need to be a Champion...  In fact, Champions don't even have any special options for themselves. They have to take one of the unit's options to get anything special. One of the best things about Chosen, IMHO. I've had some great times with throwaway quintuple-melta units, just for those things you really need to kill.

Same here. Outflank a Rhino with 5 melta chosen, right next to an IG gun line if possible and go on a melta drive-by rampage.
When it works it is epic.
