So I'm assembling a LW Schwere Pz Co. using the Grey Wolf book. One of the units I'll definitely be using is a full platoon of Gepanzerte Panzerpioneers and, from the options available I can switch out up to 3 of my Sdkfz 251/7s with Stuka Zu Fuss. As I don't see how a half-tracked assault bridge will be of much use with Tigers, I thought it might be neat to switch out at least 1 for the SZF option.

Does anyone have any experience fielding Stuka Zu Fuss? Is the extra 35pts really worth it? I've never even seen anyone use them, let alone played against someone who's used them, so I have no idea...

They're only any good against infantry and guns (poor AT, good Firepower) and they can be difficult to get LoS with as only the Half Track (not the passengers) and Command team can spot for them.

I've never played them in V3 but bringing them on later in the game may be advantageous.

Back in the English morass

Its worth while taking one of them. They are utterly devastating aginast unarmoured targets (and they can still put a big dent on anything with a top armour of 1). They do have quite a few drawbacks but they are relatively cheap and have a huge damage potential. If you are going to be using GepanzertPanzerpioneers anyway then I would definately recommend one.
