Using the 2 player starter set and a few extras I came up with this list:

High Exemplar Kreoss
* Repenter
* Crusader
* Vanquisher
Exemplar Cinerators (Leader and 4 Grunts)
Exemplar Errants (Leader and 9 Grunts)
* Exemplar Errant Officer & Standard Bearer
Exemplar Errant Seneschal

Have 2 points left and trying to decide between a a 2nd Senechal (if I can even have one), 2 Vassal Mechanics or a 4 man unit of Choir.

Personally, I don't think there is much value in taking the max choir. The min ought to suffice for you, and Menoth can always find a use for an extra point (Wracks or a mechanic, for example).

I'm not a huge fan of Cinerators either, but if you have nothing else to use then go for it.

Is there value in taking 2 or more units of choir? My thought was to grab 2 boxes of them so I can have 2 or 3 smaller units of them to buff my jacks

Seeing as a 'jack can only benefit from one hymn at a time, it would be a bit complicated to really get some mileage off multiple Choirs.
I think it would be rather situational and you would get better value for your points in another way. Don't let it stop you from trying if you want to, but for a first wave of purchase I do think a Vassal of Menoth would serve you better.
