My choice would be the humble Chimera with a few personal touchs added to it. E.g Kick ass sound system and a fully-stocked Fridge. Anybody else have anything similar?

Anyone not choosing a jetbike or land speeder is turrible. Come on riding around in a jetbike or a land speeder. That is like every normal person's dream as a kid. Besides it could actually be practical in day to day life.

Oh, and definitely grot oilers. Nothing beats having a couple of squaky guys yelling "Zog off!" and throwing wrenches at passing people and vehicles.

Kinda surprised no sentinel has been mentioned yet. Think, most of the vehicles mentioned so far require a trained crew to operate. A sentinel is a walking gun platform that would probably be a ton of fun to drive, and you can do everything yourself. It can even mount a chainsaw and a flamer or all sorts of other crazy weapons. i'd love to go just about anywhere in one and just explore.
Now, if I thought I could fly it without crashing in 2 seconds and killing myself, I'd take a deffkopta. It's a jetbike, without the downsides of being a panzy eldar vehicle that'll fall apart in a stiff breeze. Deffkoptas are built nice and proppa, and are essentially a harley davidson with helicopter blades and a jet turbine attached...
