I've seen so many opinions on this, I decided just to ask. I want to start stripping my tau which have... 3-4 base coats on them by this time, etc. Just to spruce them up, and make them look nicer. Which (Canadian available) stripper is best?

I'm not sure if it's available in Canada or not, but I've been using LA's Totally awesome with great results.

Diamond at the Candy Shack is a consummate performer.
Simple Green is available world wide and works very well.

Yep, Simple Green. Or Acetone I've heard.

Was waiting for that one
And I have been hunting for simple green, for one that works in walmart, I sure have issues finding things in that store ><
Acetone I've heard ruins models as well as strips them, so I'm kind of split on that one, risk it or not.

Acetone will destroy any plastics and I suspect resin too, Its the best thing ever (except the fumes off it) for metal figures.
I dont know about Canada, but in the UK Dettol Liquid (a brand of antiseptic cleanser for cuts and scrapes.. or just general cleaning) works rather well, but leaves the models with a hospital clean smell!

Yeah acetone breaks down plastic so: no
You should find spray bottles in house cleaning with the mops. Purple power in automotive works well too. Sams club should have SG by the gallon

I have stripped hundreds of figs. Here's my best product recommendations.
Simple green is a good product and is non-toxic and super safe, so less worry about kids and pets. Works against most paintjobs. If it was primed with gesso or a GW spray and painted with acrylics, A treatment or two of simple green (leave it soak for a few days) will usually get rid of all paint.
However, I've found that "Super Clean" or "Purple Power" work faster and a bit more thoroughly on stubborn paint. They have the same main ingredient as SGreen, but also have some additional. Unfortunately this means that they are not non-toxic so you will have to use gloves.
Niether of these products will completely get off enamel primers, though a bit of that shouldn't harm the second paintjob.
For really stubborn paint on metal figures I give them a dip in Methyl Ethyl Keytone (MEK) but that stuff is uber-toxic and not to be used lightly.
