So, I'm having a little bit of trouble deciding which would be more beneficial two Stormtalons or two Ork Fightas. I understand that they can both be outfitted to deal with different areas on the battlefield, so I thought id post a couple of typical lists I use to see where the help is needed.

Salamanders

Dreadnought w/MM, HF
X6 Sternguard w/combi-meltas, in TL Lascannon Razorback
X10 Tactical Marines w/MM, Flamer, Sgt w/PF, Rhino
X10 Tactical Marines w/ ML, Meltagun, Sgt w/PF/CombiMelta, Rhino
Predator w/ AC/HBs
Thunderfire Cannon

So that's what I usually play. Opponents consist of Necrons, Dark Eldar, Blood Angels, Orks, Templar and Guard. I realize this is something of a matter of opinion, but I believe that these lists could benefit from a pair of these Flyers. One of each doesn't really sound good because if one goes down, then that's it.

Anyways, any suggestions?

One thing to consider when building an army in 6th is "how am I going to deal with flyers?"

I see 3 major ways:
Massed conventional fire (twin linking helps here)
AA-gunned fortifications
Dogfighting with your own flyers.

Listed in worst to best order (in my opinion) So you are going to get flyers for one of your armies, and the other is going to have to make do with what it has. I can't speak for the orks, but snap-firing for them is not as bad as other armies, due to their already crummy BS. Your marines are a vulcan list, so the TL melta will help. Probably only the MMs will have the range to hit the fast movers, plus the TL las on the razor. 3 options to shoot stuff down? Not the best.

The marines would defiantly benefit. More then the orks I can't really say. What you might consider is getting one of each flyer and then a aegis defense line or a bastion that could be swapped between armies. That way you have two solid AA options for both.

I think attack bikes are the best way for salamanders to deal with flyers.
I foresee in the long run the stormtalon will not be great unless you have a real need and you need multiple of them to survive, mostly due to interceptor guns.

Anyway the same things go for orks go for a number of jets. I think your current list for orks has gone down quite a bit.

I actually posted to say you should have both. You can run 6 jets and 2 stormtalons. I think that would make a very good army.

Unfortunately I can do two right now, and again, I thought two for one army instead of one for each army would be the way to go.
is it suggested then, that the Ork Fightas might help that army better, while the Salamanders have better options?

Most armies will bring an interceptor gun. So a pair of stormtalons/dakkajets arriving on different turns will both die.
So all you need is a way to deal with enemy aeroplanes.
Orks have lootas which at BS1 should still pack a punch, stormravens may be a huge issue but they are a lot of points.
Salamanders have TL multimeltas, about a 1/3 hit(11/36), so that should if took in numbers like on attack bikes, though stormraven are an issue.
