I am wondering where Sentinels and Hell Hound variants fall in the division of Imperial Guard forces?
For example, infantry and I assume that includes chimeras are one part. Leman Russes are another part, and artillery is another.

I'd assume some sort of recon/cavalry type group, though with many they'd just be lumped into "Armor", at least the Hellhounds. To be honest, organizational type things really depend more on whoever is writing the story than any established T&O or anything like that.

True, there's a lot of individual opinions regarding this out there, and the studio material does give some leeway as to how it can be interpreted.
FFG's new RPG "Only War" came up with the concept of these already mentioned "Hunter-Killer regiments", that combine armour and infantry assets for quick and dangerous strikes somewhat away from the main battle lines. Not exactly what one might expect from traditional Guard, but still a valid interpretation.

Sentinels are standard scouts a squad of sentinels are typically part of every regiment being considered part of the special weapons company's while armoured fist regiments or mounted infantry regiments would have one squad a company for tactical flexibility armourd regiments would have one squad in the special weapons company artillery regiments could use a squad of sentienels as forward observers but salamanders ate the preffered choice other then krieg and moridians I know of no regiment that justifies the uses of hellhounds on regular basis and I know banewolves are krieg and inquisition only

Sentinels are said to be part of recon regiments. They are organized in much the same way as russes or artillery.
I don't know about the hellhounds, though. They don't really explain that all that well. My guess was always that they were more or less kit-bashed in the field, where commanders took chimeras they already had and ordered more armor welded to the sides and an extra-egregious amount of promethium added for the turret heavy flamer.

If we'd go by GW sources, the Hellhound is an AdMech byproduct of the Sororitas Immolator tank. Any products yielded from researching the Icaria- STC (recovered by a Missionary Morben the Devout during a Ministorum crusade in M35) was supposed to remain exclusive for the armies of the Ecclesiarchy, but a couple centuries later the Mechanicus cheated and produced a variant of the cannon, putting it on a Chimaera chassis and selling it to the Imperial Guard.
The two organisations love deceiving each other, but always take great care that any breach of contract either cannot be proven or was not actually a breach but just very fine print.
The story was in some WD; I believe it was the one with that huge article about Rhinos.
