How are we supposed to work out which models are closest to the centers of the many Blast markers when a unit with multiple Barrages fires?

This is an actual rule in the actual rulebook. Quit whining about how you can imagine someone's army touching you in a bad place and play by the actual rules.

I'm assuming that there are multiple models equidistant from the center of the blast markers.
Randomize.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

You do each blast separately. For example a manticore would th the initial then up to 2 more if a 6 is rolled.

You don't do casualties and saves until after all the markers have been placed.

page 34 under multiple barrages, 4th bullet point..
Once all of the markers are in place, resolve hits and Wounds separately for each, remembering to allocate any wounds caused to the model closest to the center of the appropriate blast marker.
This is one case where you roll wounds separately.

But that doesn't mean you resolve one fully before starting the next. You would still find out how many hits before resolving any wounds, you just have to remember where each blast landed and resolve their wounding etc. one by one afterwards.

Interceptor Drones can disembark at any point during the Sun Shark's move (even though models cannot normally disembark from Zooming Flyers).

This is clearly the clunkiest rule in this edition.
