I would like to know how this list will do in a non-tournament setting, since I will be only joining non-hardcore tournaments for a while. The approach of the list is a brick list that has some support in the back for getting a few models down. Would like to know what I need to know when playing this list against others.

Its Butcher it will do fine.
At 50 points though you may want to consider some other options
Warjacks: Juggarnauts are good, but might want to think about toying around with Beast 09 or a Spriggan. Having a jack with reach is great at the point value.
Boomhowler + Valachev? Its an interesting move, just a insanely pricey one. Double check if you can give him to a "character" unit. For less cost a full unit of Kazazy Assassins on butcher feat under iron flesh hits likey a beast and is hard to deal with as their defense will be so high.
Widowmakers: I know the thought process, on butcher feat they might be able to do decently. However look at your list as is. You have tons of medium based models, your going to block your optimal targets of small based models or medium base heavy infantry on the feat turn. So you may just want Winterguard who give you more options, and do better under the feat turn on the charge. Also iron fleshed + bob and weave is really good.
If you absoluately going to stay with the list, your very vulnerable to shooting because your army is very slow. You may think you can target saturate, but at 50 points opponents that will shoot will have lots of it, and whittle your units to non effective. Also Pbutcher lists excels at fighting, yours doesn't do that.

I believe Valachev should be able to, as long as they are small or medium base sized units. Well, I could eventually get a Kazazy Assassins along with the Underboss, though Winterguard infantry is a different story, as I don't know if I want to go to the deathstar route.
As for the Spriggan idea, I am considering it, but I am also waiting on the plastic kit, as I prefer to carry less heavy metal.
I plan on getting Kazazy Eliminators for the list. Any other suggestions that would improve the list later on?

The list decent but it is slow so in objective based senarios can be challenging. Valachev and Boomhowlers will be able to contest but everything else will take some time to get there to support Boomhowlers.
The Juggernaut is a great jack for the points; lots of ARM and Ice Axe is awesome, especially with Fury but they are a focus pig and the lack of reach hurts and pButch running two upkeeps means he only has four focus to camp and give out. I would consider running either Drago or a Beserker with Beast 09 or the Spriggan. Of this I am partial to the Beserker/Spriggan combo. Beserker is effecient as it runs and charges for free (know pButch can have his jack charge for free but that doesn't help get them into position quick) and cheap for a heavy. The pButcher spell allows him to boost melee attacks to compensate for poor MAT and feat and Fury help with the P+S 16 Axes. Its a bit of a trade but I find the Beserker to be useful under pButcher. The Spriggan has reach and heavy armor. It is a focus pig but what shines on the Spriggan with the list you have is the grenade launchers and the ability to put out Flares to negate stealth. This will help the widowmakers to deal with stealthy single wound figures and same with the bombardiers.
In terms of infantry I am not a fan of the Bombardiers but that is just me. I think the Great Bears work very well in this list but then where don't they work well. Demo Corp is also a nice add if you are looking to Tier list but then you will have to make some seriously major changes to the list you have. The Demo Corp hit hard, epecially with feat and Fury but are expensive point wise.
I think the eliminators will be a lot of fun with this list as long as you don't outpace pButcher's feat bubble.

Well, the two juggernauts were there, because a battlebox along with the shocktroopers. I've already still plan on turning the 2nd destroyer into Black Ivan.
I don't mind getting the Spriggan, but as said, I am waiting a couple months for a new plastic kit coming out. Also, I just realized I also do have pSorsha, so Beast maybe an option I will consider (though won't be getting that until I get income again).
I know people aren't too keen about Bombardiers, but at that time, there weren't many infantry boxes at a store I was at. Plus I only recently discovered a store that had a bigger selection of warmachine.
I am more likely thinking that the Great Bears will be one of my more immediate purchases I plan on getting, as they are good for the 5 points they offer.
Overall, I am open to changes, but purchasing them is a whole another story. I also haven't played warmachine in a while, so I am rusty and just wanted to go for something interesting for the short-term.
