Which one is better (in your opinion)?

Even though they both are assault units, they don't do the same job (other than 'kill stuff')

hormagants are a cheap horde unit. They like squad sizes of 16-20, and need synapse. They are good for screening and counter assault. A squad of 20, even naked, will keep an enemy from getting too close to whatever area you deploy them to. They have to waste substancial firepower to kill of a large squad of them. Thats firepower that isn't shooting at your other units.

Genestealers are best in squads of 8-12 and even better with a broodlord. They like to infiltrate or outflank. They force your enemy to play to the center as a few squads of genestealers with broodlords can really ruin their day if you outflank and eat a squad.

Genestealers took a hit in 6th since they cant's assault after outflanking, but if you outflank them into some cover and then charge from there, they can still be effective.

Neither are really considered very competitive, but both are fun and fluffy to play in casual games.

"Super" Hormagaunts (Toxin/Adrenal) are competetive in large numbers (at least in my mind) but are still not as good as the Tervi/termagant combo to me. For pure competetive value, gants/tervi > Hormagants > Genestealers > Warriors > rippers for troops. All are great if you play for fun or fluff though!

In 5th edition there where some tactics by taking a large point of genestealers and just go multi assault gun ho. With 60 genestealers. I do not know how viable it was then or is now.

This. Now that the Broodlord can go beast mode with the right die rolls, and combined with a Swarmy and Invisibility and Preferred Enemy, and then FNP from one source or another, and 20 Genestealers can turn into a pretty scary sight.

I'm not a big fan of the large stealer blobs anymore. Before you used to be able to get 50% of the unit out of LOS from someone shooting, now with Focused Fire that is gone. And with all of that stacked on it even termigaunts are scary.

But as to the original question: I have to go with depends. If you are looking for an assualt unit, go with the stealers. If you are looking for a screen or a tarpit, go with the hormagaunts.

They are very diffrent from each other so it is hard to say one is "Better".

In the "small assault unit" I always put my stock in gargoyles. Not troops I know, but they are so very very very good.
