Hi guys... Ive been using washes for some time and these same ones have made my models look shiny... Is there any reason for this?
Ive used grypione sepia. Nuln oil and green one from the older range

Washes tend to do that. Hit the model with a matt varnish to seal it.

Washes have a tendency to do that, regardless if it has done it before. Have you been shaking them before use every time? There is nothing wrong with them so there is no need to worry about it. Hit the model with matte varnish (which you should do anyway) and that glossy finish will go away.

GW washes have a pretty matt finish unless you let it pool very deeply and it has a chance to separate as it dries. I haven't had a GW wash give me a gloss finish since they used inks rather than washes. In fact, the matt finish of the GW washes I found to be more matt than the army painter antishine varnish, except for the aforementioned pooled wash.
I'd be making sure you're mixing it properly before you use it and avoid excessive pooling.
