I have a unit of the old(ish) Ultramarine Tyranid Hunter Veterans that I want to use as Sternguard in my Blood Angels army. Now, they don't need to have Blood Angel logos on the shoulderpads, but those big U's on the shoulder have to go.
I don't have any experience with modeling/converting/anything, so what would you all suggest? Is there a way to cut the U off the shoulder? Would it look too bulky and terrible to just cover it all in green stuff?

They are pretty chunky, I'd file/dremmel them off. And don't forget all the "U"s on the chest, knees, etc.
To be honest, you might be better off trading them to someone for a box of death company or something. I love those vets, very cool models. But also, -VERY- Ultramarine. Generacizing them is going to take a lot of work.
Considering the general dislike of finecast, somewhere out there there has to be an ultra player who would give them a good home.

Use clippers first to get rid of the bulk of the symbol then a knife & file to finish.

I'd suggest investing in a good knife with replaceable blades, needle files and sandpaper (different grits, 1200 for supersmooth finish). That should give you a good starting package for modeling/converting. After that start practicing either really carefully, or on models you're not too fond of.
Removing something off a shoulderpad once you learn how to use a knife and file should be easy enough.

I used the generic Cadian commander for my Steel Legionnaire Colonel. To get the Cadian Gate logo off his right shoulder, a needle file was sufficient. It takes a while though, but it comes out smooth. It may be harder if you're avoiding the raised lip of a marine shoulderpad.
