Whats the best way to run two units of demigryphs at 2000p?

The armies I encounter have about 4 of them with full command.
Effective little unit with lots of attacks.
I have even seen this unit in smaller armies.

Units of 3-4 with at least musician, champion/standard optional as the champ only gets one more attack, and +1 combat res isn't needed as they'll kill all the res they'll need. But if you need a magic banner go ahead.

The Champion *can* help to isolate characters, get underdog bonus, or be placed on the end to limit damage. Not saying he's an auto-include, but he provides a little more than just the one attack.

Depending on how many points I'm playing, I run them in one unit of 4 or two units of 3 with a standard bearer and a musician. I love them, and my friends hate them, which makes me love them more.

My 2200 list has one unit of 4 with the flaming banner and a musician but no champion. It's a bona fide combat winner, which the empire has been sorely lacking for a long time, particularly now with the t4 buff. However, I'd caution you against running 2 units. If you run into an enemy with a helblaster or multiple organ guns, or even just a large number of s6 attacks (vampire counts, ogres, beastmen), or a REALLY large number of s5 attacks (Savage orc biguns, skullcrushers, halberd warriors), the unit loses much of its effectiveness. You need something out of that special slot that can take some wounds and still be reasonably combat effective. I use greatswords (27 with a meteoric priest) in this role, and they have the added advantage that they can be shot a little and not completely suck as a result.

If you're running that many demigryphs. Run some lore of heavens on your level 4. You're going to have to smash them into something relatively weak when they make up that much of your army. Harmonic convergence will let them stick around against str 4 or below forever. Don't forget that they just got FAQed and they're now toughness 4 so they can grind EVEN BETTER!

It depends a bit on what else you're running in the list. If you're running a Heavens level 4 or double volleyballs with Master Engineers, I think you can get by with just 4 in each unit (with musicians) as the support means they can fight a lot more things- if there's something you're worried about putting them into, shoot it with both volleyballs first. Chances are, you can now walk over it with 4 Demis.

Otherwise, I'd say 5 in each unit. If you don't have as much support for them you need to make up for it with more wounds and more attacks.
