I'd give them a thorough stir, first, and see if that helps. Sometimes, the medium used seems more satin than matte, so if too much of the pigment has settled, they develop a bit of a sheen. If that doesn't work, you can either throw matte varnish over the top after you've finished painting or mix a little matte medium into your pots to dull them down before you start working (don't go overboard, here, as you'll end up dropping the opacity of your paints, potentially to undesirable levels).
