From the 40k books I read, there are a few beverages-amasec, tanna, etc and food-basically rations. But what are they equivalent to, in the2nd millenium?

Amasec is a hard liquor. I believe most of the beverages mentioned will be alcohol of some kind.

The food packs mentioned usually have some sort of description.

The IG are given a food paste that comes in tubes, its basically tasteless nutrition. What is it made out of? On some worlds its made out of recycled waste and even human bodies, giving its nickname of Corpse Starch. But on other worlds its probably made out of syntheticly grown protien and carbs.

However, if I recall correctly, Ciaphas Cain spends some time oggling some different dishes and liquors, alongside the running joke of "soylens viridians," but then those books aren't exactly intended to be taken overly seriously.

food in the 41st millennium for humans at least isn't all that different then our reality. IG rations though tend to be miserable nutritional paste kind of things though.

Eldar tend to eat salads and fruits, Ork eat squigs and more squigs. Space Marines have field rations but also will eat enemy xenos.

Cannibalism is still to an extent frowned upon by most traditional regiments, I'd like to think. I don't think it helps the morale of any soldier to know his mortal remains will be turned into food for his comrades. In fact, in not one, but two of the Tanith books, Gaunt discovers that due to food shortages, the local "chefs" had been raiding the morgues to bolster supplies.

Honestly I get sick of them calling it caffeine when it is obviously coffee. Caffeine makes me think they're just drinking the stuff straight without coffee beans.

It's probably artificially made caffeine - that has no more seen a bean than you or I have seen a purple-people eater.
It's an ersatz coffee substitute.

In one of the Ultra Marines books there is a "Agri-World" that is basically a farm planet that provides food to nieghboring planets in the system. Thats all that planet does basically. That is in the Ultima Segmentum or whatever the Ultra Marine system is called so everyone there has it a little easier than the rest of the galaxy. I imagine most hive worlds eat mostly recycled food with people in it and drink recycled water (made from people). I wouldn't doubt that there are probably planet sized factory farms churning out augmented chicken breasts the size of Space Marine pecks too.

Agri-worlds are a classification of planetary type. You are right in that these worlds' sole goals are simply to provide food for other planets. During the Gothic War, the hive world of Stranivar (which depended on other agri-worlds for food) was blockaded and most the population basically died as a result. There's a whole bunch of instances where the best way to attack a hive world was to either cut off its supply from its agri-world or destroy the agri-world completely.

The story 'Survivor' in 'Hammer and bolter' mentions the character eating a can of processed grox meat and scavenging for water bottles. I have no idea what grox meat is but in my mind I imagined it to be like spam (canned ham)

Grox is a universally available animal (kinda like an animal version of a Chimera ) which seems to be able to grow (and is grown) literally in almost every circumstance and environment available. Everyone eats it!

Also, I just recalled ragnar blackmane's bloodclaws squad eating treebark in the forests while on garm. they did so because they could handle it and get nutrients while the inquisitors with them ate the food tubes.

In various black library books the generals and staff will have feasts. Ex. Gaunts Ghosts, tech priests of mars, and guard book really. There are so many planets and traditions and specialities that the administratium probably has an entire sector dedicated to cataloging them! On the note of tech priests and other such mechanicus shenanigans, they eat basically pastes that have a nice, not taste, but... wait for it... wait for it... algorithm!
