Alright, I've been at this for a while and already used my Google-fu to it's fullest extent, so now I must ask the community for help. I can't decide what chapter to go with. Any help? The things I'd like are:
- A Codex chapter - they can deviate a little from the codex, but nothing like the Black Templars or Space Wolves.
- I don't want to paint lots of white - a little is fine, like as a detail color, but not as a primary color.
- I'd prefer to have them to have a midrange and midfield type of playstyle. Very direct and a take-and-hold type of thing.
- Something easy but fun to paint.
- Not a fleet-based chapter.
- None of the strong Adeptus Mechanicus ties like the Iron Hands.
- A simple chapter that relies on good ol' steel and muscle to win the battle.
Any ideas? Whenever I find a good one there's something that discourages me.

Ultramarines. I play them because even though everyone says they are the poster boys and you see them ALL the time... You really hardly ever see them on the table. At least around here.
Oh and it's a really striking color scheme when done well.

I was going to say Space Sharks (aka the Carcharodons), but you said no fleet based chapters. If you're willing to bend on that point they fit your other points nicely. Plus if you use their FW Character from IA10 you get to swap Bolters for CCWs, everyone gets Furious Charge, units that win combat get Rage, if the character gets Rage he also gets preferred enemy, and he unlocks a unit of Lightning Claw terminators as troops. Oh, and he has gauntlets that are both Chainfists and Lighting Claws with you getting to split his attacks how you see fit.
You could do the Exorcists, they're straight Codex Astartes save for having 3 Scout Companies due to having so many recruits (there is a HIGH washout rate with how they bring in new recruits....) if you're just looking at something basically plays like the Ultramarines but doesn't wear blue (or have a complex about how awesome they are).
Otherwise I don't have too many ideas for a chapter that uses the Vanilla Dex and plays specifically like how you mentioned.

Why not Crimson Fists? Kantor gives you the ultimate mid range shooty option with scoring sterngard and you have the added bonus of having one of the lesser played codex marine chapters. At least I've only ever seen one person with them and he stopped at like 750 points worth.

From your OP the chapter that immediately sprung to my mind was the Salamanders.
No white, good mid-range army and have a solid build that is also fluffy with Hes'tan. No strong ties to the Mechanicum.
I'm not sure where they are based though as I'm pretty sure their homeworld was destroyed.

Just use the Codex: Space marines and make your own. It is the best codex for making an army fit the playstyle you want, rather than having a playstyle fit the army.
Maybe they have a quartered paint scheme (left of upper body is black, and right is gunmetal. Left of lower is gunmetal, and right is black.). Maybe their company heraldry follows normal codex patterns, or maybe just a kneepad demonstrates the Company color.
Call them....the Marines Adamantine, for example.
Field them with heavy assault elements from Fast Attack, with troop units in transports.
Have their fluff be what you want. Maybe they are like the Ultramarines, dealing heavily with supporting a small section of systems under their control. Maybe rather than the Mechanicus, they support the Imperial Navy for their fleet transport needs, retaining just a small number of Battle barges and Cruisers.

How about Dark Angels?
- They deviate a little from the Codex.
- They can have zero - lots of white depending on how you want your army built.
- Plasma is good for midrange, whilst packing a punch.
- Dark green is much easier to paint than a lighter green like the Salamders, or yellow like IF.
- They're not technically fleet based, the Rock is a huge chunk of planet that they live on.
- No strong ties to anyone, never mind the AdMech
- First founding, they have more old steel than anyone else.
Plus the new codex is out soon.

The suggest ones I've liked the best so far are the Carcharodons and a DIY chapter. The Crimson Fists almost made it, but I decided they're a no go since I've recently done a lot of blue painting and there's a lot of fluff about them already, leading little room for creativity. Same reasons for why I'm not doing Ultramarines. Salamanders are incredibly common from what I've found, and I don't particularly want to do Dark Angels either. Thanks for the suggestions though! I'll keep doing some looking around and maybe start working on some DIY stuff. If anyone has any tips or suggestions for making a chapter, feel free to to tell me

White Scars (Hit'n'run/ambush type attacks), Raven Guard(Guerilla Warfare), Pre-heresy Thousand Sons (Psyker Spam), Pre-heresy Alpha legion (Subterfuge and Domino plans). That just first founding examples
OP: I'm going to second Salamanders. Good mid-range army. Not Red Scorpions level adherence to Rowboat's Blog, but still have a similar structure and battle doctrine. Interesting models with green and black. Vulkan He'stan is pretty beast. Melta and flamers count as TL, while Thunderhammers are Mastercrafted. Ability to field a lot of Termis and dreads if you want. Thunderfire cannons, son. Plus, there are 7 companies instead of 10, so....that's cool too. It's really a win/win.

Iron Fists have enough fluff to be a chapter, but not enough that you can't personalize them, a simple color scheme, basically adhere to the codex, have a homeworld, don't have particularly strong ties with any other Imperial Organization, and are an Imperial Fists successor, so a big proponent of steel and muscle.

I liked the Black Consuls, but unfortunately they're all but wiped out. Can't really play a dead chapter

Scythes of the Emperor are pretty cool, don't really like the standard scheme though. Might go with them with an altered scheme, but there's some things about the chapter I don't like.

I've been shying away from Salamanders since so many people play them, but with how many people have been recommending them I might have to give them a second look.

Imperial Fists are cool, but have too much fluff already and are fleet based. Can't say I really like the Blood Ravens either.

I like the Iron Fists, they sound pretty cool. Would change up their paint scheme a bit, but I might go with them.
Thanks for all the suggestions! I'll do some more research on the Salamanders and see about an alternate scheme for the Iron Fists.
