That's what makes them different from other flavors of Marines so it gets a lot of attention. But they do all the normal Marine stuff, too.

Not at all. they are still a Space Marine Chapter and will answer the Imperiums needs when it calls. But the hunt for the Fallen underpins all their work, and takes precedence over all else. there have been times theyve been fighting and assisting Imperial troops and then just left with no reason, likely because of a lead on the Fallen.
Only the Ravenwing, Deathwing and Inner Circle know of these facets of the Chapter, and each to varying degrees. So the rest of the Chapter would be confused if all they did was hunt something they arent aware exists. Often their hunt for the Fallen takes them into genuine imperial conflicts. But unbeknownst to the Imperial forces and most of the Chapter, the Ravenwing, Deathwing and Inner Circle have ulterior motives for helping out.

It's not all of what they do but it accounts for far too much of it. IMO the unforgivable thing about the Dark Angels is not that half the legion fell to chaos in the heresy but that they've spent ten millennia putting their own redemption ahead of everything else when other chapters who loose marines to chaos can seemingly shrug it off with little effort and carry on being the protectors of the imperium.

Chasing the Fallen isn't a constant occurrence. It just gets written about because it's their hook.
One would imagine the whole bit about the Fallen wouldn't be such a big secret if that was all they ever did, lol. Most of the time, they just go around Marineing. Then, on the rare occasions that they hear some kind of rumor or think they might be on the trail of some Fallen, they go after them.
It's like Space Marines falling to Chaos. It happens extremely rarely, and it's always a huge deal when it happens. There's a reason why 10,000 years have passed and there are a dozen or so truly renegade Chapters listed in the various sources.
It's just a matter of keeping perspective. People complain that the timeline is all bunched up close to 999.M41. What they don't realize is that's because the galaxy is massive and M41 is the point in the timeline the game is at. The timeline in M37 is going to be just as jam packed with events, but the guys at Games Workshop have no need to go all Tolkein and flesh out every single thing that happened across 10,000 years. So the "past" millenia just get the highlights.
